Butter and Crystal Salt
After a period spent travelling and working with food all over the world, Zandra Bring and Patrik Johansson have now settled in Western Sweden. On their farm, they have rekindled a tradition for producing butter the old-fashioned way – with soured cream and slow churning for the best possible taste. Sweden has a long history of butter production. It was the Vikings who introduced the process of making butter to a number of countries including France. Sweden was already exporting butter as early as the 1300s, and in the nineteenth century the country was the largest butter exporter in the world.
Inspired by the proximity to the sea, Zandra and Patrik have also started to make salt. Every month, they boil 10,000 litres of seawater to produce 200–300 kg of salt, following a method that dates back to the Middle Ages.
