Soft Cheeses

A few dozen kilometres south of Visby on the island of Gotland lies Stafva Farm, which has been in the von Corswant family since 1862. Since 2004 there has been a small farm dairy specialising in soft cheeses. Milk with the best characteristics for producing a high-quality cheese is selected from the farm’s 80 cows. The milk is pasteurised directly in the curdling vat, and then used to produce both white and blue mould-ripened cheeses. The cheeses are flavoured with local plants and herbs and spices, including Gotland truffles. In just a few years the reputation of the cheeses has spread among Swedish cheese buyers, and the dairy is now being extended to increase capacity.
