Hard cheeses

Oviken Cheese, owned by the Åkermo family, is a dairy farm with ancestry dating back to 1350, and the farm has been in the family for generations. The farm is situated in the Storsjö district, a fertile farming district in the north of Sweden. Their cheese is produced with milk from their own sheep, as well as cow and goat milk from nearby farms. Due to the fact that the unique milk raw product is of such a high quality, most of the cheeses are unpasteurized. They are left to ripen on spruce deals, and are dealt with in a craft manlike manner in order to develop its exquisite taste.
Range: Hard cheese from unpasteurized cow, sheep and goat milk. Has been left to ripen for at least 4 months.
