Just over an hour by car from Stockholm, in the heart of idyllic Sörmland, is Flinkesta, where for the last ten years Monika Naess has been preserving berries and fruit.Three years’ training in preserving techniques and contacts with pre-eminent colleagues in Europe have led to a range of 70 or so products, in demand by Sweden’s leading restaurants and a quality-conscious clientele of shops and individual customers.The recipe for success is the very best ingredients, ideally organic, no additives, and pure tastes. An important driving force is a love of artisan production and the desire to create the perfect jam.
